You just can’t beat the taste of freshly grilled salmon! We eat it regularly at our house, and this amazing grilled Honey Glazed Salmon, marinated with fresh ginger and orange, is one of our all-time favorite salmon recipes.

We like to serve this Grilled Honey Glazed Salmon with a fresh green salad and a light side. Pair it with our Carrot-Ginger Dressing and Cranberry-Orange Couscous for perfect a combination!

The prep for this Honey Glazed Salmon is super easy! Just mix up the marinade and let your salmon fillet soak in it for at least an hour (and up to 24), then throw it on the grill. If you prep the night before, you can have an elegant meal on the table in just 20 minutes!

Tips for Buying Salmon

  • Fresh salmon should be firm, and have a deep “salmon” color.
  • Salmon meat should have a slight sheen and appear somewhat translucent. It should spring back when touched.
  • Cuts should be smooth, without obvious gaps. (Gaps and separations in the muscle fibers are a sign of old fish.)
  • Packages should be airtight, with no visible liquid.
  • Salmon’s fish odor should be mild, fresh, and pleasant. If it smells “fishy,” keep looking.
  • Whenever possible, choose wild caught salmon over farmed salmon. The health benefits of wild-caught salmon are well-documented.

Grill Tips for Perfect Honey Glazed Salmon

  • Keep salmon refrigerated until ready to cook.
  • Keep salmon skin intact while grilling. The skin will help it stay together and keep the salmon meat from curling on the grill.
  • Grill fish 3-5 inches from heat, 4-6 minutes per ½ thickness. 
  • If you must turn your salmon while grilling, do so only once. (Fillets under 3/4-inch do not need to be flipped on a closed barbecue.) 
  • Place salmon fillets on a barbecue grill mat for easier, cleaner grilling.

Equipment

  • Reusable Barbecue Grill Mat
  • (OR Large Stovetop Grill)

Ingredients

  • 1½ pound salmon fillet About ¾-1" inch thick

Honey Orange Ginger Marinade

  • ¾ ounce fresh ginger peeled & chopped
  • 2-3 cloves garlic minced
  • ⅓ cup light soy sauce or tamari
  • ⅓ cup orange juice freshly squeezed if possible
  • ¼ cup honey
  • 1 green onion finely chopped

Instructions

  • Gather and prep marinade ingredients.

  • In a medium bowl, whisk together chopped fresh ginger, minced garlic, soy sauce, orange juice, honey, and chopped green onion.

  • Lay salmon fillet in large dish or tray.

  • Pour Honey-Ginger Orange marinade over salmon.

  • Turn salmon over so skin side is facing up and exposed meat is immersed in marinade.

  • Cover, refrigerate, and allow to marinate at least 1 hour, and up to 24 hours.

  • When you are ready to cook the salmon, preheat barbecue (or stovetop grill) to medium.
    Remove the salmon from marinade and place the salmon on the grill mat. Reserve leftover marinade.
    Cover the barbecue and allow to cook for 4-6 minutes per ½-inch of thickness, or until the internal temperature reaches 125°F [52°C].
    If you are using a grill mat, you should not need to flip the salmon unless it thicker than the suggested 3/4-inch.
    NOTE: If you are using a stovetop grill, you will need to flip the salmon halfway through.

  • Remove salmon from grill and allow to rest for 10 minutes before serving.

  • While salmon is resting, strain leftover marinade into a small skillet. Bring marinade to a boil in over medium-high heat.
    Reduce liquid by about half, and remove from heat.
    I like to throw a tablespoon of butter into the sauce at this point, but it's not required.

  • Serve salmon on a bed of fresh greens and top with marinade reduction.

Notes

We usually choose to cook the whole salmon fillet together for the sake of presentation, but you can also cut it up into single serving portions prior to cooking for easier serving.

Properly cooked salmon will look a couple of shades lighter, and will flake easily. The USDA recommends a minimum internal temperature of 145°F [62.7°C] for cooked salmon, which should be measured at the thickest part of the fillet.

It is important to note, however, that salmon continues to cook after it is removed from the heat. For this reason, we usually use an instant-read thermometer to check for doneness, and aim to remove salmon from the grill  when it reaches an internal temperature of 125°F [52°C]. We then cover it and allow it to rest for 10 minutes or so before serving.

Why use a Grill Mat?

(A grill mat is not required to make this recipe, but if you use one, you will find that the process is a whole lot easier.)

If you’ve never used a barbecue grill mat, you need to give it a try! Grill mats make grilling fragile things (like fish) a snap, and smaller items won’t fall through the grate. The first time we used one, I was honestly amazed at how well it worked, without losing any of that great grill appeal we all love.

Salmon Safety

  • Raw salmon should be stored in the coldest part of your refrigerator, for up to 2 days.
  • Serve cooked salmon immediately. Any leftovers should be refrigerated within 1 hour.
  • Leftovers should be eaten within 2 days.

Sweet Potatoes & Marscarpone with Fresh Rosemary Brown Butter

This started out as a post about stuffed squash blossoms, but this Sweet Potatoes & Marscarpone with Fresh Rosemary Brown Butter is so amazing that it earned a post of its very own. 

Our zucchini plant is going gangbusters, as zucks tend to do this time of year: one last push before the cold moves in to make way for winter squashes. Last week, I decided I wanted to make some stuffed squash blossoms, so I set to work to think up a little something different to filled them with.

Before I got to cooking though, I wanted to get a few pictures of those beautiful blossoms. So I set up on the back deck (where I shoot all my images, as you have probably figured out by now).

Enter Tarzan.

Tarzan started out life as a barn kitty, and spent the first few months of his life swinging from horse tails and blanket racks down in our barn, which is how he got his name. When he got big enough to escape the barn, the first thing he did was run up to the house and find a comfy spot in the sun to lounge.

A lot of things have changed in the last decade, but Tarzan isn’t one of them.

He saw the sun warming the bench where my squash blossoms were laying, and hopped right up.

There was no way I could get him to move. I kept picking him up and putting him down on the deck, and he kept hopping right back up and getting comfy before I had a chance to turn on the camera. I finally just gave up and started taking cat pictures.

Anyway, back to those squash blossoms – or rather the filling for the squash blossoms. Sometimes, when you throw things together in the kitchen, it works out pretty well. Sometimes it doesn’t. This time, it didn’t turn out well…

This time, it turned out Awesome!

So awesome, in fact, that I decided to give it a post of its very own.

I cannot tell you how much I love these sweet potatoes. The nutty, fragrant rosemary brown butter is a perfect complement to the sweet potatoes, and the marscarpone gives it a velvety smooth, rich texture. As we licked the last bits out of the bowl with our fingers at the end of our meal, Mr. B and I already had a long list of things I could create using it as a base: sweet potato pie (of course), and cookies, ice cream, fudge – who knows what else. I know food bloggers are always raving about how delicious their own creations are, but honestly, this stuff is good. Really good.

Sweet Potatoes with Mascarpone & Rosemary Brown Butter

Ingredients

  • 1 lb. orange-fleshed sweet potatoes peeled and cut into ½ cubes
  • 1/4 cup mascarpone
  • 1/2 t. Kosher Salt or more, to taste
  • 4 oz. Salted Butter
  • 2 sprigs fresh rosemary each about 4" long

Instructions

  • Place prepared sweet potatoes in a medium saucepan and add enough water to cover them, plus an extra inch.
  • Bring the water to a boil and cook the cubed sweet potatoes for about 15 minutes, or until they are very tender.
  • Drain the sweet potatoes, and place them back in the pot.
  • Add mascarpone, salt, and 2 tablespoons of the prepared Rosemary Brown Butter.
  • Using an immersion blender, puree ingredients until everything is smooth and creamy, with no lumps remaining. (You can do this step in a food processor if you don’t have an immersion blender.)

To prepare Rosemary Brown Butter:

  • In a small skillet over medium-high heat, heat butter and rosemary until the butter melts and begins to foam. Continue cooking, swirling the pan occasionally, until the butter turns a golden brown and gives off a nutty aroma. Be careful not to burn the butter.
  • Remove from the heat immediately and allow to cool slightly.
  • Remove rosemary sprigs from butter.

Notes

Depending on the size of the blossoms you use, you may end up with extra filling. You will survive.
To serve this as a simple, delicious side dish, simply double the recipe.

Grilled Corn on the Cob {with Compound Butter}

Tis the season.  (No, not that season.)  It’s Farmers Market season.  That magical time of year when local markets are busting at the seams and roadside stands pop up nearly everywhere.  Those long, hot summer days when we load up on every sweet, luscious fruit and vegetable we can get our mouths on, before they disappear for another year.  Sure you can buy things year round in the store, but they just aren’t the same, and we all know it.  Especially when it comes to things like Peaches, Tomatoes, Watermelon… and Corn.

Ahh, Corn.  Fresh corn.  Freshly grilled corn.  Mmmm…

Compound butter for corn on the cob!  The beautiful part about it is that you can experiment to your heart’s content. Last night we ended up having roasted corn with Lemon Basil Butter, and it was delicious. I just followed the recipe for Mesquite Cilantro Butter, substituting McCormick’s Perfect Pinch® Lemon & Pepper Seasoning for the Grill Mates® Mesquite Seasoning, and basil for the cilantro.  I loved how the lemon flavor really brightened the flavor of the corn.

I love the open-corn method (as in the video) if I’m wanting corn with that carmelly grilled flavor.  It’s especially wonderful for using as an ingredient in salads and such.  But for corn on the cob, we prefer the method shown below.  It results in a decadently moist ear of corn that bursts with delicious corn goodness.  (Bonus: Super-fast husk removal – no fussing with corn silk at all!)

Roasting Corn | The Good Hearted Woman

To roast corn this way, simply throw the corn, husks and all, onto your barbecue.  Turn them every few minutes and in about 15 mintues, you will have perfectly raosted corn.  Then just cut the end off and slide the husk and all the corn silk off the other end.  It doesn’t get easier than this!  (If I had only known about this method years ago.  I can’t even count how many hours of my life have been spent shucking corn!)

Whether you choose to grill it with the corn exposed as in the video, or with the husk still on as above, the compound butter makes every bite of corn pop with flavor.  (Ha! I totally didn’t plan that, but there it is 🙂 )

Finally, while I was writing this post, I discovered something very cool on the McCormick website – their FlavorPrint Profile.  If you click through and answer just a few questions about your personal tastes, the website will use your FlavorPrint Profile to match up “recipe recommendations that get you. This sounded like an interesting concept, so I thought I would give it a try.  The brief FlavorPrint Profile questionnaire took me less than a minute to complete, and asked me preference questions about everything from cilantro to cheese cake.  The questions also seemed to vary depending on the answers (I did it a couple of time, just for you).  Once complete, I did a search for “grilled corn,” and a ton of delicious sounding recipes popped up, each indicating how closely it matched my FlavorPrint Profile.  (As you can see, today’s Grilled Corn recipe is a 89% match for my personal profile.)
