When Mr B and I went to school together back at old Madison High, one of the best parts of our day was our concert choir class. (Mr B is a gifted baritone, and I a passable soprano.) 

Our choir director, Fred Hammack, was a talented, warm, demanding, wonderful man who taught us far more than music, and wove his way into our hearts so deeply that even now – decades later – we remember him with abiding admiration, gratitude, and affection.

Irish Blessing Celtic Knot Shamrock Print {May the Road Rise...}

Ultimately, it was because of Mr. Hammack that I painted this Irish Blessing piece. It was his practice to end every concert with a four-part choral arrangement called A Parting Blessing [J. Jerome Williams], the lyrics of which are taken from the traditional Irish Blessing. 

It’s not surprising then, that after years of practice and performance, this beautiful, meaningful song found a permanent place entwined in our musical memory.

♫ ♪ May the road rise up to meet you… May the wind be always at your back
May the sun fall warm upon your face ~ The rain fall soft upon your fields
… And may God hold you in the palm of His hand. ♪♫

Whenever those lines roll their way through my mind, I remember our choir and the people with whom we sang with great fondness. Music saved Mr B and I in high school (along with so many others); so to us, this beautiful song symbolizes far more that a simply holiday in March.

UPDATE 2020: Our old high school in NE Portland is being completely razed and remodeled. (Believe me: it needed it!) As part of the ground breaking (May 2019), Mr B and I had the chance to sing A Parting Blessing with an alumni choir formed specifically for the event.

Being a part of the alumni choir was an amazing, heartwarming experience, and it was such a privilege to be able to sing with all those wonderful, talented people once again. 

Unfortunately, I don’t have a video of the choir performance of the Irish Blessing song, but thanks to a generous classmate, I do have one of Mr B singin’ a solo at the Groundbreaking event (That’s me backing him up on my autoharp.) He’s reprising the song he sang at our Senior Assembly many years ago.

As you may know, St Patrick’s Day is my favorite holiday. In fact, I love all things Celtic – even my wedding ring has emeralds and Celtic knots on it – and I’ve always had a thing for Ireland and the Irish people. I can literally take on a light brogue just thinking about it. (In fact, as I write this, I’m falling into it).

My affinity for Ireland dates back to before I can remember, and St. Patrick’s Day is always a real celebration at our house. On that day each year, I serve up a feast of “Once-a-Year Mashed Potatoes” (so called because they are so rich and creamy you should only eat them once a year), slow-cooked corned beef, corn, cabbage, and soda bread; and then I usually throw in something new year to year to mix things up. 

However, before even one fork full passes, I deliver my compulsory pre-St Patrick’s Day dinner monologue (which I will share with you one of these years) about the fascinating and inspiring life of the real man who become St Patrick. It takes all of about three minutes, and my kids sigh and groan and laugh through it every year. At this point, they can repeat it almost verbatim. I wouldn’t have it any other way. 

Today I am sharing with you one of my most prized recipes: my Irish Soda Bread. Perfected and approved by real Irish persons, for your pleasure, this Soda Bread is amazingly easy to make.

St Pat’s Irish Soda Bread

Perfected and approved by real Irish persons, for your pleasure, this Irish Soda Bread is amazingly easy to make.

Ingredients

  • 4 cups all-purpose flour
  • ½ cup white sugar Use 1/3 cup if you like your Soda Bread a little less sweet.
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon Kosher salt
  • 1 ½ cups raisins I use a mix of golden and craisions. Just use your favorite raisin.
  • 2 teaspoons caraway seeds Optional. (Not really.)
  • 1¼ cups buttermilk
  • 1/2 cup sour cream
  • 1/2 cup melted butter melted (I use salted butter.)
  • 2 eggs lightly beaten

Brush on Top

  • 2 Tablespoons butter melted
  • 2 tablespoons buttermilk
US Customary - Metric

Instructions

  • Preheat oven to 350° | 177°C.
    Lightly grease a 9-inch round cast iron skillet, 9-inch round baking pan, or heavy standard loaf pan.
  • In a large mixing bowl, combine flour, sugar, baking powder, baking soda, salt, raisins and caraway seeds.
  • In a medium bowl, buttermilk and sour cream and melted butter. Blend in eggs.
  • Fold the flour mixture into the liquid mixture, mixing just until well combined.
    Knead dough in bowl about 10 to 15 strokes.
    Dough will be very sticky. Mound the dough in the prepared skillet or pan using a spatula or wooden spoon.
    DO NOT use an electric mixer for this step – your bread will bake up too heavy.
  • In a small bowl, combine 2 Tbls. melted butter with 2 Tbls. buttermilk; brush the mounded dough/loaf with this mixture.
    Use a sharp, wet knife to cut an ‘X’ into the top of the loaf.
  • Allow dough to rest in the pan for about 20 minutes before putting into oven.
    This step is optional, but the “rest” time will give you a lighter loaf in the end.
  • Bake preheated oven for 60 to 75 minutes.
    You can brush the loaf with the buttermilk/butter mixture once or twice during baking if you wish.
    Test loaf for doneness by inserting a toothpick in the center – it should come out clean.
  • Let cool and turn bread onto a wire rack.

An Original St Patrick’s Day Cocktail from Mr B

A few springtimes back, Mr B was mixing up a Tequila Sunrise and decided to use Blue Curaçao in place of the traditional grenadine. This substitution turned the whole drink a bright green! 

This happened just after Saint Patrick’s Day, which is a very big deal around our house. When we saw that tall glass of green, we had a flash of inspiration! I added a mandarine orange for garnish and a shamrock from my windowsill, and there we had the Irish flag in a glass – our very own, original Emerald Sunrise!

Enjoy! 

Curaçao is a liqueur flavored with the dried peel of the laraha citrus fruit, similar in flavor to an orange, and is grown on the island of Curaçao, hence the name.

Ingredients

For each drink:

  • 1 1/2 ounces 1800 Tequila
  • 1 1/2 ounces Blue Curaçao
  • 4-6 ounces Orange Juice
US Customary - Metric

Instructions

  • Fill an 8-10 ounce glass half full of ice.
    Add Blue Curaçao and tequila and mix.
    Stir in orange juice.
    Garnish with a mandarin orange slice and a shamrock. (A mint leaf or sorrel will work fine too.)

Emerald Sunrise ☘️ Mocktail Version

No Alcohol for you? No problem!

Mix up a kid-friendly St Pat’s Day beverage by combining:

  • three parts orange juice
  • one part lemon-lime soda
  • few drops of blue food coloring.

Are Shamrocks Edible? 

First things first. YES! Shamrocks are edible, and they make a lovely garnish. (I just felt like we needed to get that out of the way.) So are false shamrocks, better known as sorrel.

Shamrocks have three leaves (not four) and were used by St Patrick to teach the concept of the Holy Trinity to the Irish people. Like the Irish people themselves, shamrocks are one of those plants that survive under very difficult circumstances, which is why there is a pot of them (shamrocks, not Irish people) thriving on my kitchen windowsill year-round.

Next, if you are going to perpetuate this St Patrick’s Day green beverage tradition, I do think Mr B’s Emerald Sunrise is a far better choice than green beer.  Plus, I love the name. (If you know us, you’ll know that it’s a little nod to our birthstone too!)

Some years ago, on the day after St Patrick’s Day, my daughter Gracie and her father were t-boned by a truck-driving teenager. Gracie sustained multiple life-threatening injuries, and was admitted to ICU, where she stayed for nearly a month.

At the time, in addition to nine-year old Gracie, we had four other young children, including an eight-week old newborn. While the girls’ father held down the fort at home, Baby Em and I slept and lived at the hospital with Gracie. I survived the first week almost entirely on saltine crackers and Jello Pudding cups from the ICU refrigerator.

It was several days before I finally made my first real trip home – to take a real shower, revive my spirits, and visit my other girls and their father.

When I arrived, I found my dear friend Bev and some other ladies in my kitchen, delivering dinner to my family. After a short visit with the ladies, I went to shower and clean up. I read the girls a book, sang them a song or two, and packed up for the next week.

Almost as an afterthought, I spooned some of the potato-topped casserole that Bev had left us into a plastic tub to take with me, and then I buckled Em back into her carseat and sped off to the hospital.

It wasn’t until late in the night, as my injured child slept amidst her web of tubes and wires, that realized I was hungry. When I opened the plastic container, the sterile hospital air filled with amazing savory goodness.

Padding down to the Parents’ Kitchen, I microwaved it, and then, fork full by fork full, I let that Shepherd’s Pie wrap me in a blanket of warmth, kindness, generosity – and hope. Even today, the memory – standing there alone in the hospital kitchen eating Bev’s Shepherd’s Pie – brings me to tears.

From that time on, making Shepherd’s Pie has been a labor of love, and in that spirit, we have made it a Valentine’s Day tradition. It is warm, comforting, enduring, and hope-filled – and serving it to the people who mean the most to me in this world is one way I show my love to them.

Bev’s original recipe was A-Mazing, but over the years I’ve made a few tweaks. Most notably, the original recipe calls for peas, but I substitute diced yams because, as I mention frequently, I strongly dislike cooked peas.

Ingredients

Filling

  • 1 pound ground beef or ground turkey
  • 2 tablespoon olive oil
  • 1 small yam peeled and diced ¼"
  • 1 large onion minced
  • 2 medium carrots peeled and diced ¼"
  • 1 pound mushrooms chopped
  • Salt and black pepper to taste
  • 5 tablespoons flour (I use Wondra to avoid clumping)
  • 1 tablespoon ketchup or more if needed
  • ½ cup heavy whipping cream
  • 1 ¾ cup vegetable broth
  • ¾ cup red wine or apple juice
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons fresh thyme chopped

Topping

  • 1 ½ pound russet potatoes peeled and cut into 1-inch cubes
  • ½ pound sweet potatoes peeled and cut into 1-inch cubes
  • 2 tablespoons butter
  • ½ cup heavy whipping cream
  • Salt and freshly ground black pepper to taste
  • 1 large egg
US Customary - Metric

Instructions

  • Adjust oven rack to upper middle position and preheat oven to 375°. 

Filling

  • Brown ground beef in a large skillet. Remove from skillet, drain and set aside. 
  • In the same large skillet, heat olive oil over medium heat.
    Add yams, onions, and carrots and cook, stirring frequently until everything is tender.
    Add mushrooms and cook until mushrooms soften and release their juices.
  • Sprinkle flour over everything, and then squirt in ketchup. Stir and cook over medium-low heat for about one minute.
  • Add cream and cook about another minute. Add wine or juice, Worcestershire sauce, and thyme.
    Simmer over medium heat, stirring frequently, until mixture is thick but still saucy, 5-8 minutes.
  • Add browned ground beef to the mixture in skillet and stir to combine. Pour mixture into a 2-quart casserole dish. 

Topping

  • In a large saucepan over high heat, bring potatoes, sweet potatoes, 1/2 teaspoon salt, and water to cover to boil.
    Reduce and simmer until tender, 15-20 minutes; until tender.
    Drain potatoes. Add butter and cream to potatoes and mash until smooth.
    Season with salt and pepper.
  • Carefully spread prepared potatoes over meat and vegetable filling, using a spatula or large spoon to smooth the top.
    In a small bowl, make an egg wash by whisking together 1 tablespoon water with egg.
    Brush the top of the potatoes with egg wash, and then drag a fork across the top to make ridges.
    Put in oven and bake until the filling is bubbling, about 15-20 minutes. 
  • Turn on broiler and cook until top is golden brown, 3-5 minutes.
    Remove and cool 10 minutes. Serve.

Is this Shepherd’s Pie or Cottage Pie?

Technically, this is a recipe for Beef Cottage Pie.

What’s the difference between Shepherd’s Pie and Cottage Pie?

The ingredients and directions for making Shepherd’s Pie and Cottage Pie (also known as Farmer’s Pie) are exactly the same, except for the primary protein. 

Shepherd’s Pie is traditionally made with lamb. (Hence, the Shepherd.) 

Cottage Pie is named for its primary protein: Turkey Cottage Pie, Chicken Cottage Pie, Beef Cottage Pie, etc. You get the idea. The only protein that doesn’t go into Cottage Pie is lamb or mutton. (Because that would make it Shepherd’s Pie.) 

Why don’t you change the name of this recipe to “Beef Cottage Pie” or “Beef Farmer’s Pie”?

First off, I believe that the delineation between shepherd and cottage and farmer is in great part a regional issue. In my neck of the woods, if you go into a restaurant and order Shepherd’s Pie from the menu, you will almost always be served a beef-based pie. If you invite us to dinner and tell us that you will be serving Shepherd’s Pie, we will not be expecting lamb. More to the point though, I have been making this casserole and calling it Shepherd’s Pie for two decades, so I’m sticking with it.

Bottom line: this the best in cozy comfort food, no matter what you call it!
