Mushroom & Parsley Bruschetta

  • French bread stick or Italian loaf
  • 7 oz Mushrooms
  • 3.5 oz Goat cheese
  • Parsley
  • Olive oil


  • Preheat the oven to 400° F.
  • Cut a large French bread stick or Italian loaf into 1/2 inch slices. Brush the slices with olive oil on both sides and put them in the oven. Bake until golden on both sides
  • Heat a tablespoon of olive oil in a small frying pan, and fry the mushrooms until just tender.
  • Spread the goat cheese on top of every bread slice.
  • Chop the parsley and spread it on top of the goat cheese.
  • Add the mushrooms and finish it with some pepper.
